INGREDIENTS 2 Extreme Wellness Whole Wheat Tortillas (8 inch)
1 T Olive Oil
1/4 cup canned sweet corn
1/4 cup salsa
1/4 cup cooked brown rice
1 cup fresh spinach (torn)
2 T light sour cream
1/4 cup shredded cheddar cheese
1/2 t Chipotle chili powder or 1/4 t of cayenne (if you want hot)
1 T Cilantro (chopped)
DIRECTIONS Saute spinach and rice (must be already cooked...a great use for leftover rice) in olive oil for 2 minutes. Add salsa, corn, and chipotle chili powder. Heat through. Stir in cilantro and remove from heat.
Put 1 Tbs of sour cream and half the shredded cheese on each tortilla. Spoon hot mixture onto tortillas and wrap them like a burrito.
Makes 2 wraps.
